
The piñata cake is named after the Mexican party center pieces made from paper with a hollow center which is used to hold candies and other sweet treats. The idea behind the pinata cake is to make the cake-cutting process a bit more exciting and unique. It adds an element of surprise and will keep people guessing as to what really is packed inside it. This lemon sponge cake is a favorite for any kids birthday party.
Ingredients:
- 2 Organic Lemons
- 500 g / 17.63 oz Soft Butter 82% Fat
- 200 g / 7.05 oz Sugar
- Pinch of Salt
- 6 Eggs (medium)
- 400 g / 14.11 oz Flour
- 1 1/2 tbsp Baking Powder
- 200 g / 7.05 oz Icing Sugar
- 200 g / 7.05 oz Philadelphia Cream Cheese
- 500 g / 17.63 oz Smarties or M&Ms
- Sprinkles for Decoration
- 5 Strawberries
Method:
Thoroughly wash organic lemons and finely grate the lemon peel. Squeeze the lemons afterwards and set juice with lemon peel aside. Mix the 300 g / 10.58 oz soft butter with sugar and a pinch of salt until you have a creamy texture. Add eggs one by one to the mixture and half of the lemon juice. In a separate bowl mix flour and baking powder and combine with the butter mix. Continue stirring the batter until all ingredients are fully combined.
Fill the batter equally into 2 greased springform pans (Ø 16 cm / 6.29 inches) and bake for approx. 30 min at 180 degrees Celsius / 356 F). Let both cakes cool down.
Carefully create a hole in the middle of both cakes leaving a top and bottom cake layer. Mix the cake crumbs with 70 g / 2.46 oz icing sugar, 2 tbsp Philadelphia Cream Cheese and 3 tbsp Lemon Juice. Roll into small balls and decorate with sprinkles. Set cake pops aside.
Prepare cream by mixing 200 g / 7.05 oz butter with 130 g / 4.58 oz icing sugar. Add the remaining Cream Cheese (room temperature) and 3 tbsp lemon juice to it. Stir the cream cheese mixture until smooth. Spread a bit of cream on the top of the first cake and fill the hole with smarties. Place second cake on top and spread the cream around the entire cake. Place the cake in the refrigerator for a couple of hours. Decorate with cake pops and strawberries before serving.
