These delectable rum bites with chocolate are a great sweet treat to serve with a coffee or after dinner. The rum flavor is not overpowering and just adds a little something to it. There is no better ending to a delightful meal than finishing it with an attractive dessert.
- 2 Egg Yolks (medium size eggs)
- 1 pack Vanilla sugar or a few drops Vanilla Extract
- 1 Tbsp. Sugar
- 1/2 Sheet of White Gelatin
- 250 g / 8.81 oz Mascarpone
- 2 Tbsp. Rum
- Lindt Chocolate Thin Wafers or any other Chocolate Wafers
Add egg yolks, vanilla sugar, sugar to a mixing bowl and whisk with a handheld electric mixer for approx. 5 to 8 minutes until all ingredients are combined and the mixture is smooth. Soak gelatin in cold water. Meanwhile heat up the rum in a small sauce pan. Add gelatin to the rum and dissolve it. Add Mascarpone to the egg mixture and whisk it on the lowest level with the handheld electric mixer. Add gelatin and continue to stir the mass for a few minutes. Season the mixture with nutmeg. Once done take a tea spoon and put the mixture on the chocolate square. Place another chocolate wafer on top. Continue to make as many rum bites as you need. The mixture is good for at least 10, depending on the size of your chocolate squares. Decorate with mint leaves or cocoa powder. Enjoy!
