Naked Chocolate Cake With Berries

The exposed look of cakes has become increasingly popular in recent years and frosting-free cakes are a huge trend in the baking world. As the name suggests naked cakes have no frosting on the outside and expose the cake layers and filling. What we love about this cake is the elegant style and chic look. It is a fantastic addition to any celebration like birthdays, weddings, baby showers or holidays. We gave it a try and our naked cake turned out beautifully. You might never want to cover a cake with frosting again. The cake has an organic feel to it and impressed our friends and family alike. Here is how to make a naked chocolate cake with berries. We have adapted the recipe from Dr. Oetker.

Equipment Needed:

  • Springform Pan (Ø 20 cm)
  • Baking Paper

Ingredients Batter:

  • 150 g / 5.29 oz Soft butter
  • 175 g / 6.18 oz Sugar
  • 1 Pack Dr. Oetker Vanilla Sugar or a few drops Vanilla Extract
  • 1 Pinch of Salt
  • 3 Eggs (size M)
  • 150 g / 5.29 oz  Philadelphia Cream Cheese / Full Fat Cream Cheese
  • 225 g / 7.93 oz Wheat Flour
  • 2 ½  tbsp. Dr. Oetker Original Backin or any other Baking Powder
  • 30 g / 1.05 oz Dr. Oetker Gustin Fine Corn Starch
  • 30 g / 1.05 oz Baking Cocoa Powder (unsweetened, 100% cocoa)

Ingredients Filling:

  • 400 g / 14.10 oz Strawberries
  • 125 g / 4.40 oz Blueberries
  • 125 g / 4.40 oz Raspberries
  • 400 g / 14.10 oz Cold Whipping Cream
  • 1 Pack Dr. Oetker Gelatine Fix (15 g) or any other Gelatine
  • 250 g / 8.82 oz Philadelphia Cream Cheese / Full Fat Cream Cheese
  • 1 to 3 tbsp. Lime Juice
  • 50 g / 1.76 oz Icing Sugar

Method:

1. Grease springform pan bottom and cover with baking paper. Preheat oven.

Top / Bottom heat: about 180 ° C
Hot air: about 160 ° C

2. Stir up the butter in a mixing bowl with a handheld mixer using the stirring rods. Add gradually sugar, vanilla sugar and salt to it and mix it until all components are combined. Mix in the eggs and stir each of them for about 1/2 minute at the highest level. Add cream cheese and continue stirring. Mix flour with baking soda, corn starch and cocoa and stir in slowly at medium speed. Place the dough into the springform pan and place it in the oven for approximately 60 min. It might take a bit longer if you use a smaller springform. Once done, remove the springform pan and let the cake cool down.

3. Wash the berries and slice the strawberries in half. Whip the cream and gelatine in a mixing bowl until it is stiff. Mix the cream cheese with the lime juice and icing sugar in a separate bowl. Add the whipped cream to the mix and place the mixture in the refrigerator for approximately 30 min.

4. Cut the dough twice to have three equal layers of cake. Spread 1/3 of the cream on the first cake layer and place strawberries on top. Press them into the cream firmly. Add a bit of cream on top of the strawberries to make the second layer of cake hold better. Place the second layer on top and spread the cream again on the cake. Add the blueberries and continue till the end. The top of the cake is decorated with strawberries. Place the finished cake in the refrigerator for at least 1 hour.
